From a 12 year old Highland Cross, this extra mature beef is hung as an entire side in our standard fridge for 21 days. Special cuts are then placed in the Himalayan Salt chiller until aged for 60 days, giving a unique flavour of premium extra matured beef.
The Himalayan salt maintains a dry atmosphere in the chiller and hence preserves the beef throughout the ageing process.
Normally reserved for our specialist restaurant customers, we have a limited number of ribs available for our online customers, this product will be removed from our website as soon as it is sold

David Messiter5 StarI bought a sirloin roasting joint from Intwood Farm for Christmas lunch. I have to say it was one of the nicest, tender and juicy joints of beef I’ve ever tasted. I’d like to think that a lot of that was down to my roasting talents but I suspect the raw raw material was by miles the biggest contributor. Absolutely superb.Saturday 26th December 2020
